South-of-the-Border Lasagna

I made this for supper last night for the first time, and it was pretty good! I thought I'd share the recipe here. It's cheap to make, and very easy!

Cook Time: 15 minutes, makes 8 servings

1-1/2 cups sour cream
1-1/2 cups salsa
Vegetable cooking spray
6 cups cooked rice
16 oz can black beans, drained and rinsed
3 cups shredded cheddar cheese, divided
2 cups crushed tortilla chips

In medium bowl, combine sour cream and salsa; set aside.

Coat a 13x9 inch pan with cooking spray. Layer bottom of dish with 3 cups rice.
Top with half of the sour cream mixture, then with 1-1/2 cups cheese. Add layer of beans, remaining rice, and remaining sour cream mixture. Bake at 350 degrees for 15 minutes. remove from oven.

Mix remaining cheese with chips and sprinkle on lasagna. Return to oven and bake 5 minutes, or until cheese melts.

Uncle Kevin, throw me in the creek!

Our Mother's Day this year was spent with Adam's parents and with his sister Becky and her fiance Kevin's campsite. It's a beautiful place, right along side the Mahantongo Creek. The kids were thrilled- not only did they get to spend time with Grandma and Pappy, but they got to play with their beloved Aunt Becky and Uncle Kevin.


Riley got to go fishing with Daddy, Pappy, Uncle Kevin and his brother Keith. She even has her very own pink fishing rod!








Owen, Connor and I stayed behind with Grandma Diane and Aunt Becky. It was nice to be able to visit with them, and Owen had lots of fun playing in the stones!



And aside from a few small fussy moments, this is what Connor did all afternoon:




As we were leaving, Riley (never one to pass up a chance to play with Uncle Kevin), jokingly asked him to throw her in the creek. She was surprised when he picked her up and walked toward the water!


What a nice day to spend with our family. Thanks for having us over, Becky and Kevin!

Tuesday Ten

Tuesday Ten: Ten things happening in my life

1. Owen is doing really well with Speech Therapy. But I still worry that he won't be where he needs to be by the time he gets to Kindergarten. And that time is fast approaching.

2. Connor is getting so big, so fast. I've noticed that with the first two kids, I couldn't wait for them to get bigger and grow up (in a sense). But with Connor, I want him to stay a baby forever.

3. However, last night I had a nightmare that I was pregnant again.

4. I'm having a really hard time getting Connor to nap in his crib. I've only managed to get him to nap there a handful of times, and each time, he only sleeps for about half an hour.

5. But he sleeps wonderfully in his crib at night. We lay him down around 8:30 or 9. I wake him up to eat at 11, and then put him back in his crib, and then he sleeps there until 5 or 6. After that, he eats and sleeps in bed with us until I get up at 7.

6. With Adam's paycheck consisting mostly of commission, and him working in the car business, the money situation around here has been less than stellar for quite a few months now. We saw an ad in the paper where residents of Mifflinburg can apply for assistance with home repairs. We deserately need new windows, but lack the cash to buy the 16 or so we need, so we are praying that we qualify for this program. They housing authority should be coming out sometime this month to do some sort of test or assessment, and then we should hear their decision. Hopefully something good will come from the crappy past 8 months. How's that for looking for the silver lining?

7. Riley is having a great time with Girl Scouts, but I am so looking forward to the summer break.

8. I can't believe my baby girl is going into 3rd grade. After that, she'll be moving up to the Intermediate School, and she won't be in Elementary any more! But then of course, Owen will be starting Kindergarten.

9. As bad as our money situation has been, I have to say that I feel our family is complete, and I've never been this happy. Ever. Adam and I genuinely are in love with each other, and our 9th wedding anniversary is coming up in July. Getting married at 18, not many people thought that we were ready (and maybe we weren't), or that we would be able to make it work. But we love each other, and we love our kids, and we can get through anything.

10. I've been talking more with my brother Shane lately. I hadn't spoken to him in about 6 years after we moved to PA from Utah. Not for any particular reason, we just never were very close. It makes me sad- I wish we had grown up together.

My little brother Shane turns 26 today!

Why yes, yes I am. Shane and I are "Irish twins". We are the same age for a little over a month before my birthday.

The other day Grandma Cindy came over to watch the boys while I took Riley to Girl Scouts. Owen loves when Grandma Cindy comes over- she always makes sure to do something special with him while I'm gone. Monday night was no exception. I came home to see this:




Owen LOVES to build towers with his blocks. This was the tallest tower he's ever built! Of course Grandma Cindy was the Master Builder (you can only do so much when you're 3 feet tall!), but Mr. Owen was the brilliant architect.
